Indian Curry + Indian-style cauliflower "rice"
I used to LOVE Indian food. In college and for awhile afterwards, I ate Indian food at least three times a week! I even went to India to pig out. When I started the whole Primal/Paleo thing, one of the first recipes I tried to make was Paleo butter chicken. It didn't quite taste like the real deal... especially when served with a side of veggies instead of naan and Indian rice.
Colin shared this recipe with me. Though different, it's a great substitute for rice, and it tastes amazing with Indian-spiced curries. Not to mention a much healthier option... and totally Paleo!

After my trip to India, I was so sick of Indian food. Then, a few months ago, I was introduced to a Paleo-friendly Indian curry + "rice." I was HOOKED on it for weeks! Indian chicken curry recipe to come next.

Ingredients:
- 1 Head of Cauliflower, coarsely chopped into small, bite-sized pieces
- 1/4 Sweet Onion, finely diced
- 1 Jalapeno, finely diced
- 2 Tbsp Ghee
- 1/2 heaping Tbsp Black Mustard Seeds
- 1/2 Tbsp Cumin Seeds
- 1 heaping tsp Turmeric
- 1/8 tsp Ground Ginger
- 1/2 cup Water
- Sea Salt (to taste)
2. Ingredients.
Instructions:
- Gather all ingredients. Coarsely chop the cauliflower into small, bite-sized pieces. Finely chop the jalapeno and 1/4 sweet onion. Make sure you have all the ingredients ready to go before you cook this! Initial few steps are quick.
- Melt the 2 Tbsp of Ghee in the large pan over high heat. Add the heaping 1/2 Tbsp Black Mustard Seeds and the 1/2 Tbsp Cumin Seeds (i.e. a touch more black mustard seeds than cumin seeds). Saute until you hear the seeds popping.3. Popping seeds.
- Once it is smoking, add the finely diced jalapeno and 1/4 sweet onion.
4. + diced onions and jalapenos.
- Add the cauliflower. Cook for a minute.
- Bring the heat down to medium-high and add the 1 heaping tsp of Turmeric. Be careful not to get it on your shirt! Mix.
5. + Tumeric.
- When the turmeric reaches an even color over the cauliflower, add 1/4 cup of water.
6. even coating.
- Let the water cook off a little bit, then add the 1/8 tsp of Ground Ginger. Mix. Salt to taste. Turn the heat down and cook for another 10 minutes or so, or until desired done-ness.
- Serve and enjoy!
I think this is the one of the best Paleo substitute for Indian curry sides. Look out for the Indian Chicken Curry recipe in a week or so. Super delicious!!
